STUDY ON THE LEVELS OF KEY QUALITY PARAMETERS IN RED WINES

The study aimed to evaluate the physico-chemical and chromatic parameters of red wines obtained in the Segarcea vineyard during 2023, from Cabernet Sauvignon, Cabernet Franc, Merlot, Pinot Noir, Syrah, Marcelan, and Fetească Neagră varieties. The determinations included alcoholic strength, glycerol content, non-reducing dry extract, mineral substances, as well as chromatic parameters – color intensity, hue, and flavylium cation percentage. The results highlight the compositional balance and authenticity of the wines, showing the influence of pedoclimatic and technological factors on quality. The study emphasizes the importance of applying modern analytical methods for the complete characterization of wines and for supporting their oenological and commercial value.
